Many moons ago I was craving s’mores but did not have graham crackers.  I tried out these homemade ones, but with a different texture than store-bought grahams, they didn’t quite work.  On their own, however, they are really great.  Chewy and full of flavor, regular grahams are tasteless to me now.  I made them for the second time last month, and they disappeared pretty fast!  Homemade Graham Crackers from Smitten Kitchen.Note to self: next time, take crackers out of the oven while they’re still soft.  They will be nice and firm once cooled.

1. I didn’t have marshmallows2. I used less butter, sugar, and maple syrup (I have experience with these sort of things being too buttery, and I reduce the sugar in everything I make)3. They didn’t stay together in bars when I cut them 
I ended up chopping them up randomly (it was much easier to eat in large pieces than to bring a bar up to your mouth, just to have it crumble apart before you even bite into it).  As far as the lack of marshmallows, they tasted fine and made them less of a dessert and more granola-like.  The graham crackers were great, but I wish I had left them in bigger pieces.  I think if I had used all of the butter, sugar, and maple syrup, they would have stayed together and obviously wouldn’t have been so dry.  I didn’t reduce the amounts by that much, but the mixture definitely needed it.

I bought a jar of nutella yesterday

and I’m super excited.  You must understand, this is only the second jar of it I’ve had, and the first was maybe ten years ago!  So far I’ve eaten it with pretzels (dipped) and I’ve used it for s’mores.  Oh no…my mouth is starting to salivate!
